How to Use a Sharpening Stone
1. Unless your knife is very dull, only use the fine side of the stone (the lighter side). If your knife is very dull or damaged, begin with the rough side of the stone, before moving on to the fine side.
2. Lightly coat the stone with oil or water.
3. Sharpen by holding the knife edge to the stone at a 20 degree angle. Begin at the far side of the stone, and pull the knife toward you along the length of the stone. Maintain a 20 degree angle the entire time. Use light, even strokes. Use the same number of strokes for both sides of the knife edge.
4. Repeat as necessary. For a razor edge, finish with several very light strokes.
